Beef Stew

Need:
2 Cans Beef Broth
1 Can Cream of Celery Soup
5 potatoes, peeled and cubed
2 carrots, peeled and cut
1 stock celery, cut into small pieces
1 can corn
1 Onion Soup Mix
1 lb. Stew Meat

Combine all ingredients in crock pot and cook 6-8 hours, until meat is cooked and vegetables are tender.

I kind of came up with this recipe on my own and it turned out great, the broth is delicious and it is great served with rolls or french bread.

Easy Skillet Chicken and Noodles


I found a similar recipe online and then adapted it to ingredients I had on hand and it turned out to be a huge success!


Need:

2-3 cooked chicken breasts, cubed
1/2 of a 16 oz. package of egg noodles
Can of Cream of Chicken
1 bag frozen mixed veggies (broccoli, cauliflower, and carrots)
Salt and Pepper
Grated Cheddar Cheese

Instructions:

1. Cook Noodles as directed. While noodles are cooking heat soup in large skillet.
2. Add veggies into skillet with soup and cover, allow to cook until veggies are tender.
3. When noodles are done, stir into skillet with soup and veggies.
4. Add chicken, then sprinkle lightly with grated cheese and stir it in as you sprinkle.
5. Salt and pepper to taste and serve!

Note: You can use as little or as much cheese as you want, I use it lightly and then stir throughout so that it is not stringy from the cheese but has enough for some flavor.

Parmesean Crusted Halibut


My husband LOVES halibut, probably his favorite food. I tried many times to prepare it to his liking (and the rest of the families) and had little success until I found this recipe. He likes it and the kids like it so it is a keeper!

Need:

Enough Halibut (or any white fish) Fillets for your fam
1 tbs. olive oil
6 tbs. parmesean cheese
1/4 tsp salt
1/4 tsp pepper
2 tbs flour
1/2 tsp paprika
2 tbs milk
1 large egg
Lemons

Steps:
  1. Preheat oven to 500 degrees
  2. Coat dish with oil.
  3. Rinse and Dry Fish.
  4. Combine cheese, flour, salt, pepper, and paprika in a mixing bowl.
  5. Beat eggs and milk in a separate dish.
  6. Dip fish first in egg/milk mixture then coat with cheese mixture.
  7. Bake on 500 degrees for 15 minutes or until fish is soft and flaky.
  8. Sprinkle with juice from lemons before serving.
I like to serve this with rice pilaf and fruit. Makes for a nice light healthy meal.

Eye of Round Roast of Grill

I love this recipe because I always thought of roast having to either be cooked in a slow cooker or in the oven forever with carrots and potatoes. I love to grill so I was so excited with leaning how to cook a roast on the grill and it is delicious!

Need:

  • Eye of Round Roast
  • 1/3 cup Worcestershire Sauce
  • 1/3 cup of water
  • Meat Seasoning
Preheat your grill to about 500 degrees.

Trim excess fat of your roast. Rub your roast up with your favorite meat seasoning ( I use Bad Byron's Butt Rub). Place on enough tin foil that you can wrap it and not have liquid leak ( I usually use 3 pieces and turn them opposite directions across forming a larger work space). Place roast in the center of foil and fold foil into bowl like shape so that liquid will not leak, pour sauce and water over roast, then seal foil completely around it.

Place on grill and turn heat to low. Allow to cook for 1-1 1/2 hours to desired meat doneness.

When meat is as desired remove from grill, slice and serve.

I like to serve mine with mashed potatoes and I make a brown gravy mix and then mix in the drippings/ leftover liquid from the meat and it is great!

Pork Chops with Mushroom Gravy

I had tried making pork chops a million times and was never impressed with them until my mom gave me this recipe that she got from a friend in her ward. From the first time I tried it, it was a hit and is now a favorite at our house. It is also super easy so that adds a ton of points!

What you Need:

Your favorite cut of pork chops (I use thick, bone in)
Flour
Brown Gravy Mix
Milk
1 can cream of mushroom soup
Mashed Potatoes
Favorite Green Vegetable


Preheat oven to 375 degrees.

Cover chops in flour and then brown on the stove.

Place browned pork chops in a greased baking dish.

In a small bowl mix soup and gravy mix, dilute with milk until mixture reaches desired gravy consistency.

Cover pork chops with gravy mixture.
Cover with foil and bake at 375 degrees for 45 minutes. (Baking time may be less depending on thickness of chops.)

When chops are finished baking, use excess gravy from pan over mashed potatoes. Serve chops with mashed potatoes and favorite green veggie on the side.
